Please can anyone tell me what happens if we settle while going though the court process?

We recently had the FDA and the FDR is scheduled for sometime after 10th June. I just received an offer from my ex which I am accepting, they are the Applicant. What happens now in terms of the court process and getting the Decree Absolute? (Had nisi 2 years ago).

You can get a Consent Order drawn up and submit for approval by the court. You can jointly contact the court to vacate the listed hearing.
Once the consent order is sealed, you should apply for the Decree Absolute. If there's been a gap of more than 12 months since the Decree Nisi you need a covering letter to explain the delay is due to sorting out the finances. You also need to state that you have not lived together as man and wife since the Decree Nisi and there are no (further) children born of the marriage.
