My spouse is refusing to engage with the divorce process and will not be attending the final hearing (they'll be on a holiday that they booked knowing full well when the final hearing date was).

The final hearing will be going ahead despite this and I am questioning the need for a barrister given that there will be no one for them to question and no opposing side barrister to raise any questions to put to them on behalf of my spouse.

I may need a loan to pay the barrister's fees so am looking for value for money and just can't see what they will do for the money if spouse nor any legal representatives on their behalf will be attending.

You could look at a halfway house and get a barrister to just write the skeleton argument rather than actually attending court.
This will set your case out clearly and guide the judge as to what evidence is most important in support of it.
