To cut a long story ahort- been separated almost two years - planning divorce- husband says he will refuse divorce as its in his interest to make my life difficult.

No financial problems -

A child age 5-split 50/50

If he contests the divorce based on the reasons I’ve fiven (no issues with children or finance!) will it end up in court and what will happen? Will it result in a he said she said situation? I don’t have the emotional energy to go through that after everything!

What would the judge do in court as all it would be is “I don’t want to agree” because “all the reasons he hates me”- would it go as far as court?

Despite you nearing 2 years separation, if he will refuse to consent to a divorce based on 2 years separation then you will need to petition on an alternative reason.

The obvious one is unreasonable behaviour.

He could defend it - lots of people threaten to - but he would be crazy to do so. All that would happen is extra money spent on legal costs and the stress of hearings, and ultimately you would end up divorced anyway.

Be aware that your reasons for unreasonable behaviour need to be finely balanced - not so rotten as to upset the ex, but not too tame that the judge rejects them (as Mrs Owens has found out although she is awaiting a hearing in the supreme court).
