This may sound like a silly question but as a litigant in person I am doing the bundle myself and wanted to know if the pages need to be labelled electronically or can it be done by hand? I'm wondering whether I can stagger the prep of the bundle by printing and getting a few bits ready for the Final Hearing in 4 weeks and then paginate them as I'll struggle to get it done in the week before.

Most bundles are electronic these days. They need to be numbered so the bundle can be navigated easily on a screen — so from 1 to the end.
If you start an unnumbered index and begin collecting documents into folders for each section it is quite easy to assemble them in order section by section then merge and number the whole lot. A free software such as ilovepdf (google it) can be very useful. You can print out the numbered bundle if a hard copy is required. This way you will also have an (unnumbered) index to share with the other side and it will be straightforward to add documents they specifically want to include.
Remember to look at Practice Direction 27a to ensure your bundle complies with it.
