QUICK COOK recipe - Goulash

1 Tablespoon Olive oil
Paprika (hot works well if you like it spicy)
1 medium onion, sliced
8 Mushrooms, chopped
1 red pepper, sliced
1 large tin chopped tomatoes
3-4 tablespoons crème fraiche / soured cream
3-4 loins or escalope of pork cut into strips (or use beef if you prefer)
1 Chilli (optional and amount can be adjusted to taste)


Marinade meat in Paprika (use enough to cover) and refrigerate for a minimum of 30 minutes.

In a medium sized saucepan, soften onion in oil but do not let it brown. Add meat and cook for approx. 5 mins or until all cooked on the outside. Add tin of tomatoes, chilli and mushrooms and simmer for 10 mins. Add pepper and simmer for 5 mins. A few mins before serving add the crème fraiche and stir through.

Best served with rice!

THIS DISH COOKS IN NO TIME, AND IS A GREAT EASY MEAL TO DO IN A HURRY. ENJOY!

You should write a book Phew, a well know chef brought one out for xmas meals in 30 minutes, what isnt mentioned is the fact the stuff we all apparently have kicking about we don`t - anyone got star anise saffron bla bla bla.

So if you buy his book i reckon you can do a meal in about an hour for the bargain price of £40 a shot, oh and 99% of it i wouldn't feed the dog.

Hi Marshey - I think 3/4, however, it does freeze really well or will keep for 3 days in an airtight container in the fridge.

Dukey - you might not be onto a bad idea there - I also have cookbooks that require a high initial outlay for ingredients that you may never use for another few months and have to remortgage to purchase!

I have more recipes if anyone would like me to post them. I can recommend the one for Fajitas, all my own design - not a packet mix in sight and delicious, even if I say so myself! ;o)
