Smoked salmon and horseradish spread

This is great for get togethers, and also for a treat for yourself! It makes about 20 oz, if you want to make it just for yourself then scale the ingredients down as you wish.

8 oz smoked salmon (can use trimmings, the cheap cuts still work just as well)
8 oz cream cheese, room temp
1 Tb horseradish
1 Tb mayo (not low fat)
2 tsp lemon juice (or 1/2 l fresh lemon)
2 Tb chopped parsley (to top for garnish)

Finely chop the salmon into small bits. Either process OR hand mix the remaining ingredients together (minus parsley) with the salmon. If the mix needs a bit more flavor, you can also add some fresh black pepper, more lemon juice, etc.

Transfer to a serving bowl and refrigerate until firm. Its better the next day when the flavors have really blended together.
