Parsnip and Carrot soup

Hi All,
Here''s one I just cooked for my tea, and its great....
1 onion
4 large parsnips
4 large carrots
1 medium potato
1 clove of garlic
a little olive oil
1 teaspoon of corriander
2 teaspoons curry powder
1 teaspoon black pepper
2 stock cubes (I used 1 veg and 1 chicken)
1 bayleaf (optional)
Salt to taste
Chop the onion and heat with olive oil
Add the other veg chopped into small-ish pieces
Allow to sweat a little until the veg are starting to become soft.
Add the stock cubes, galic and spices and add enough water until the veg are just covered.
Now simmer for around 40 minutes until the carrots are soft (they take the longest to cook)
If you used a bayleaf remove it now and with a stick blender, blend until its a smooth creamy liquid or use a blender to do this. ASDA do a stick blender for under £5.00.
Enjoy with some crusty bread
