Braised Chicken with peppers  for Two

Cooking for that first date or simply cooking for two should not be a daunting experience. Here Celebrity Chef, Terry Miller, shares a popular Chinese recipe for two.

INGREDIENTS

3 x 15ml spoons olive oil

3 red peppers; cored, seeded and sliced into rings

1 x 5ml spoon salt

2 x 15ml spoons water

1lb chicken meat, cut into 1 inch pieces

1 oz root ginger, finely chopped

pinch of brown sugar

2 x 5ml spoons dry sherry

1 x 5ml spoon cornflour

2 x 5ml spoon soy sauce

INSTRUCTIONS

  1. Heat 1 tablespoon of the oil in a pan. Add the pepper rings and salt; stirfry for 1 minute. Add the water and simmer until the liquid has evaporated.
  2. Remove the peppers from the pan and set aside. Heat the remaining oil in the pan.
  3. Add the chicken and ginger and stir fry for 1 minute. Stir in the sugar and sherry. Dissolve the cornflour in the soy sauce and add to the pan.
  4. Simmer, stirring, until thickened. Add the pepper rings and cook for 1 minute. Serve hot.
