Szechuan Chicken, low in fat only 223 calories per serving with great flavor. If you are quick you can have it ready in only 10 minutes, 15 at the most!
4 each chicken breast, halves,boneless and skinless
1 1/2 tablespoon of vinegar (white wine or rice wine)
1 tablespoon of sugar
1 tablespoon of vegetable oil
1/4 cup of water
3 minced garlic cloves
6 scallions,spring or green onions ( cut into 1 inch pieces)
5 tablespoons of low salt soy sauce
1/8 teaspoon caynenne pepper or to taste.
Cut chicken into cubes. Lightly toss with cornstarch in bag to coat. Heat oil in skillet or wok, medium-high heat; stir-fry chicken and garlic until lightly browned. Add soy sauce, vinegar, sugar and water.
Cover and cook 3 minutes or until chicken is cooked through. Add green onions and cayenne; cook uncovered about 2 minutes longer.
