Poached eggs on marmite toast

Lightly poach two fresh eggs (I prefer duck or goose eggs)

Toast two slices of seeded wholesome bread

butter toast

spread marmite on buttered toast

place poached eggs on top of toast

season to taste

yummy!

I just cooked myself 2 fried duck eggs on toast, the eggs were fried slowly in olive oil as per Jamie's instructions in his Ministry of Food book. They were lovely!.....Will try the marmite with them tomorrow!

what kind of supermarket have they got in Wick that stocks duck eggs?
